Zilinski Spinach Tortellini

Tortellini is awesome. It's cheese in a piece of pasta. It's like ravioli except in an o-shape that makes me go yummah. So, this is a quick recipe that makes use of cheese tortellini and the dressing I happened to have on hand, because I was too lazy to make sauce and didn't feel like shopping. And another family recipe was born.


Ingredients

  • 16 oz cheese tortellini
  • 14½ oz fire-roasted diced tomatoes
  • 8 oz chopped spinach, thawed and drained
  • ½ tsp salt
  • 1 tsp fresh ground pepper
  • 18 c. chopped fresh basil
  • 1 TBS minced garlic
  • ¼ c. grated parmesan
  • your favorite brand of creamy balsamic dressing, to taste


Directions

  1. Cook the pasta according to package directions. After you drain the pasta, add all the other ingredients to the pot, and stir until everything is nice and hot. Serve hot or cold!
