Zilinski Tomato Onion Salsa

If you've never made your own salsa, you are missing out on a culinary experience. Salsa you buy in the store will never compare to the one you mince and marinate yourself. Below is our own salsa recipe, which goes great with chips, nachos, or even as a garnish on top of Zilinski Black Bean Soup. If you don't have fresh cilantro, available at your grocery store for less than $1.00 a cup, don't even bother. I've tried making this with dried cilantro with greatly disappointing results!

Ingredients

  • 2 c. chopped roma tomatoes
  • ½ c. chopped red onion
  • 2 minced jalapenos (remove seeds for a milder salsa)
  • 1 TBS red wine vinegar
  • 1 TBS minced fresh cilantro
  • 1 TBS minced garlic
  • 1 tsp ground cumin
  • 1 TBS lime juice
  • generous pinch of salt

Directions

  1. Throw it all in a tupperware container. Put the lid on and shake, chill, eat.
