Zilinski King Ranch Chicken

This is a great spring casserole dish that is creamy and delicious. Healthy? Not even close.
Ingredients
- 1 28oz can condensed cream of mushroom soup
- 2 c. chicken broth
- 1 14.5 oz can fire-roasted diced tomatoes
- 1 12oz pack of corn tortillas, sliced into 1" strips
- 2 lbs chicken breast, skinned and cooked
- 1 chopped yellow onion
- ¼ c. chopped green onion
- 8 oz. shredded mexican cheese
- 1½ tsp chili powder
- 1 TBS fresh ground pepper
- 2 tsp garlic salt
Directions
- Preheat oven to 350F.
- Mix the condensed soup, chicken broth, and can of tomatoes together in a medium bowl.
- Grease a 13"x9" dish and layer ½ the tortillas, ½ the chicken, ½ the onions and ½ the cheese, then pour ½ the soup on top. Repeat, except leave the cheese as the top layer. Sprinkle with chili powder and garlic salt.
- Bake for 45 minutes. Serve with some of your favorite authentic mexican tortilla chips.
