Zilinski Black Bean Soup

Our pantry is never with less than four cans of Ranch Style Black Beans. We have tried other brands of black beans, thinking to ourselves, well, a black bean is a black bean, but this turns out not to be the case. Ranch Style Black Beans are kick butt awesome, both in texture and in taste. I hope they read this and send me a year's supply of their beans, because damn, we love them so much.


Ingredients

  • 2 TBS veg oil
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 chopped carrot
  • 3 cloves garlic
  • 2 cans black beans, rinsed and drained
  • 14 oz chicken broth
  • 2 c. cubed cooked ham
  • ¼ tsp cumin
  • ½ tsp salt
  • ½ tsp pepper
  • Shredded cheddar
  • Sour cream
  • Chives


Directions

  1. Heat oil in large skillet over medium heat. Stir in onion, pepper, carrot and garlic and cook five minutes.
  2. Transfer from skillet to blender. Add chicken broth and one can of black beans. Puree, then transfer back into skillet.
  3. Add remaining can of beans, ham, and spices. Bring to a boil, then simmer for 20 minutes. Garnish with cheese, sour cream, and chives.
