Zilinski Black Bean Soup

Our pantry is never with less than four cans of Ranch Style Black Beans. We have tried other brands of black beans, thinking to ourselves, well, a black bean is a black bean, but this turns out not to be the case. Ranch Style Black Beans are kick butt awesome, both in texture and in taste. I hope they read this and send me a year's supply of their beans, because damn, we love them so much.
Ingredients
- 2 TBS veg oil
- 1 chopped onion
- 1 chopped green pepper
- 1 chopped carrot
- 3 cloves garlic
- 2 cans black beans, rinsed and drained
- 14 oz chicken broth
- 2 c. cubed cooked ham
- ¼ tsp cumin
- ½ tsp salt
- ½ tsp pepper
- Shredded cheddar
- Sour cream
- Chives
Directions
- Heat oil in large skillet over medium heat. Stir in onion, pepper, carrot and garlic and cook five minutes.
- Transfer from skillet to blender. Add chicken broth and one can of black beans. Puree, then transfer back into skillet.
- Add remaining can of beans, ham, and spices. Bring to a boil, then simmer for 20 minutes. Garnish with cheese, sour cream, and chives.
