Cindy Ann's Sugar Cookies

I love cookies, but don't like waiting around for them, so a quick drop-cookies is right up my alley. I found this sugar cookie recipe and loved it--good taste and easy to make in a pinch. Credit for it goes to Cindy Ann over at All Recipes.


Ingredients

  • 2 34 c. flour
  • 1 tsp baking soda
  • 2 c. sugar
  • 2 eggs
  • ¼ tsp salt
  • 2tsp vanilla
  • 1 ¼ c. margarine
  • ¼ c. sugar for rolling


Directions

  1. Preheat oven to 350F.
  2. In medium bowl, stir together flour, baking soda, and salt. In large bowl, cream margarine and 2 c. sugar. Beat in eggs, one at a time. Add vanilla and stir. Add dry ingredients to wet ingredients and stir until blended.
  3. Roll dough into 1" balls, and roll the balls in sugar.
  4. Place balls on parchment paper-lined cookie sheet and use bottom of mixing bowl to flatten balls to ½" thickness. Bake 10-12 minutes until edges start to brown.
  5. Let cool in pan for two minutes before moving to cooling rack, or cookies will crack when you move them. Let cool completely before eating. You can also roll them in cinnamon-sugar for a more Snickerdoodle-like cookie.
